The Extra Virgin DOP "Riviera Ligure - Riviera dei Fiori" from Costa dei Rosmarini is made with 100% of Taggiasca olives, the small and sweet olives from Liguria. DOP means "Protected Denomination of Origin" while "Riviera dei Fiori" is one of the three DOP sub-regions of Liguria.

The DOP "Riviera dei Fiori" from Costa dei Rosmarini is very similar to the Santa Chiara line but the olives used to make the DOP comes only from the very western part Liguria. In order to obtain the DOP certification this oil is made only with olives coming from certified trees.

Unfortunately not everybody is aware that a DOP oil is not necessarily a good oil. The DOP "Riviera dei Fiori" from Costa dei Rosmarini, unlike others, guarantees outstanding chemical values: acidity below 0.3% and peroxides below 10 versus 0.8% and 20 required by law (you can read about this).

A further guarantee of quality is the indication of the harvest year. The law prescribes a “best before date” of 18 months from the bottling date and doesn’t require any reference to the harvest date. This situation let some producers mix oils of different harvests. Extra Virgins are not like wine: old oil means poor oil.

The DOP "Riviera dei Fiori" from Costa dei Rosmarini is a very delicate and perfumed oil and, as a unique feature of Taggiasca olives, is shows no bitterness. The fruity taste and slight peppery aftertaste make it a perfect finishing oil that exalts every preparation without covering its original taste. We suggest it for finishing fish, salads, pasta sauces, grilled meats and mayonnaise.
